Looking for dairy/pareve freeze-ahead meal ideas

I'm trying to come up with a list of main dish dinner ideas that I can cook ahead and then freeze. I don't want fleishig. I have plenty of pasta recipes like baked ziti, etc. But I can only think of a few others that are relatively easy to make. Any ideas?

Truthfully, when my kids are in bed I have been known to open a can of cranberry sauce for my dinner Very Happy But I try to offer better options for my family. Just because I eat unhealthily doesn't mean they should have to.

Fried fish
Lasagna
Cannelones
Bakedfish (diferent sauces....)
soups freeze well
pizza
calzzones (both made with store bought pizza dough, its as easy as it gets)
popovers
Pareve pot pie (skip the chiken add may be toffu)
rice with....veggies, fish, salmon, paella (spanish dish)
fish croquettes
beans in tomato sauce (to eat with rice (very common in south america)
lentils (also t eat with rice)
you can freeze sauces and just make the pasta on the spot (tomato, pesto, cream...)

If you want any recipe just ask.. Wink

How do you make beans in red sauce, that sounds good!

How do you make beans in red sauce, that sounds good!




First off, it works well with any color bean (I prefer white ones) and lentils..

Let the beans soak overnight in water, that way they will cook faster, wont fall appart and wont give u gasses jeje

Mince an onion and saute until golden, add chopped tomato (canned works gr8) and saute for about 5 minutes (at this point you can add more veggies, gr8 hidding place for kids, like grated carrots, pepers, celery etc) I personaly like to add little (little little cubes - they will most probably desintegrate..) diced squash (the yellowy orange kind) or potato it helps thicken a little and adds good flavor, but if you want to skip please do..
Then add about 2 tablesspoons or more of tomamto paste, salt and pepper, ad the beans and water to coat, season well (I like using that powder soup thing?? osem?? or broth)
let boil, cover and reduce heat to low, cook until the beans are tender, you can add more water if it dries.

I serve it over white plain rice and its fantastic! (you can even add some meat - flanken to make it fancier!, or add chilly powder to make it spicy (my husband likes it spicy, but as I dont I just give him a tabasco bottle hehehe) I seriously do it every week with a different bean jajaja... plus you can do it in a slow cooker if you want,...bon apetite!
