You could make mashed potato kugel. I have a recipe somewhere, but it is basically: make mashed potatoes. Add eggs, oil, seasoning as in regular potato kugel, bake.

use a flat grater on the spuds and onion, then mix in the other ingr.

Of course it's possible! If you're not up for hand grating (watch those knuckles!), you can use a blender. Place small chunks of potato in the blender jar with a little water. Blend. Strain quickly through a colander to remove the excess water. To make it go faster, you can stir the potato/water mixture with a spoon while it's in the colander. The faster it drains, the less discoloration. Mix with your other ingredients, and bake. Yum!

You need a safety grater for the potatoes (and onions.) It takes quite a bit of muscle power, but the kugel tastes great - better than the food processor one.

Yes a hand grater is alot of work but the kugel tastes much better!

What is a safety grater?

I always scrape bits of skin when I grate the potatoes. That's one reason why I hardly ever make it which makes me a little bit sad because it was the family tradition from Europe.

I always use a hand grater- I think it's quicker than taking out the food processor, cleaning it, and putting it away! It's the peeling that annoys me.

My bil also insists that hand grated is much better. At least he does it himself every friday morning.

When I was newly married my sis used to offer me kugel every week- but first she'd have to get her husbands permission if he doesn't mind doing more potatoes.

It's a flat grater that looks like a magnified window screen. Instead of holes, it has latticed wires, which are much kinder to the fingers. Not that you can't scrape yourself when you get down to the end of the potato, but it's less painful.

And I know it's not nice of me to laugh, but many generations of women have made potato kugel without benefit of the food processor, which only came to the world about 30 years ago, you know.
