Choc Nut Cookies - lowfat"ish"
from Woman's Day
3/4 cup almonds
3/4 cup pecans
6 oz bittersweet chocolate
1/4 cup oil
1/2 cup flour
2 T cocoa
1/2 tsp baking powder
2 eggs
1/2 cup sugar
2 tsp vanilla, pure if possible
1 cup semisweet choc chips
Toast your nuts in oven and then coarsely chop. Melt choc with oil in small saucepan and then add the flour, cocoa, baking powder.
In separate bowl, beat eggs, sugar and vanilla until fluffy. Add the chocolate and then flour and mix until well blended. Stir in your chips and the chopped nuts. Scoop (recipe makes 30) onto cookie sheets and bake at 325 deg for about 12-15 minutes.
Decorations:
4 oz semisweet choc, melted & cooled
while amonds, toasted
Dip top of cookie in melted choc and top with nut. Put in freezer or fridge to set.
