reg shnitzel - dipped in eggs and cornflake crumbs then fry... or you can do mayo (and mustard if you want) and cornflake crumbs then bake...

dip in a mixture of ketchup and mayo
then cornflake crumbs
bake at 400 for about 20 min

dip in flour/eggs/flavored breadcrumbs (jason) ... then spray with a little olive oil or dab a bit on to bake ...
you can add spices to the flour too - garlic powder/black pepper/paprika/non-irradiated hot cayenne pepper ... if you like - or not ...

Here's an easy one. Mix together honey and soy sauce and mustard. Marinade the cutlets for about an hour. Bake covered @350 for half an hour, turn over and uncovered for 15 minutes.
