Green beans, Steamed Broccoli, roasted veggie melody, Zucchini grilled, Tomato bake.....
What do you want to use up?

Bake zucchini sprinkled with oil, salt and pepper - on 500 in the oven. Goes pretty fast so make tons!

There's ways to make anything. What kind of veggies are you talking about?
I love acorn squash cut in half, drizzled with maple syrup, ginger, salt and pepper, bake at 400.
Potatoes and sweet potatoes diced and drizzled with olive oil, salt, onion powder, garlic, and paprika.
Or use a bit of oil and saute veggies until they are still a bit crisp. Salt and enjoy.

I slice up onion, and put into frying pan with some oil. cut up red pepper and throw it in, stir when necessary., throw in some green beans and voila! stir until tender. yum!

saute some slivered almonds or pine nuts till brown (watch caaarefully!) then stir fry green beans (fresh or frozen). I make this almost every week. you can add other veggies (carrots, pepper etc) if you want.

sometimes I do nicely browned onions or shallots instead of the nuts.

I have peppers, carrots, zuccini and leek and onions of course.
how would you roast it in the oven?with olive oil and salt?

You can make ratatouille(sp?) with onions, zucchinis and peppers.

Grate carrots for carrot salad, or braise together with leeks in a bit of parve stock and lemon juice.

you can roast all of those I think. yes, just olive oil and salt. (the carrots may take longet though...maybe do them seperately)

italian seasoning is amazing on roasted vegies, too
