I've heard of doing one layer frozen strawberries with powdered sugar (you could try leaving the sugar out if that falls in the "junk" category,
1 layer pineapple, blended also with sugar.
one layer kiwi, blended, sugar...
freeze first layer, then pour on second, freeze, then add third...

I don't have the exact recipe, but someone told me vaguely what she does. (I do have an exact recipe for tri color ices, which is really great, but it does call for some jello mix with water, as well as fresh fruit. Let me know if you want it.

I buy the ready made sorbet and freeze one layer at the time - I tend to take the easy way out since I am so busy.

I also have a recipe - no jello - with my pesach stuff that I can pull out if you want. It uses lemon juice, sugar & water with grape juice for 1 layer, pineapple juice for the 2nd and orange juice for the 3rd, IIRC.

I've also heard of the recipe hello mentioned, but slightly differently: each layer also gets a can of crushed pineappple, and theres some juice in there. so you end up with one layer of yellow, then green, then red.
