Shabbat lunch first course

Hi,
I am always stumped for shabbat lunch first course.
Sometimes we have salatim, egg and onion hmm in the summer cold soups.
I don't like bourekas because of the trans fats.
We can't get gefilte loaves here and the stuff in a jar just isn't the same.
My husband doesn't like melon.

What do people do?????

I like to serve fruit salad in pretty glass cups, especially in the summertime when there's so much yummy fruit in season.

Sometimes I'll serve a romaine salad with sliced chicken breast (I have a few different recipes for salads like that), or a deli salad.

What about fresh fish ? Shabos is supposed to be fish and meat.

When we were in England our hosts serves us rolled up smoked salmon with a salad. It was good!

salad with Grilled Chicken
Salad with Salmon
Salmon
Corn Beef Salad (corn beef, romaine lettuce, noodles)
Salad
Baked apples in nuts
Pears in a wine sauce or peaches in rasperry sauce - more like dessert but can be served at the start

Avocado halves
Guacamole
Crudite/vegetable sticks
Grilled vegetables
stuffed mushrooms
Smoked salmon
Chopped herring
Sushi (no raw fish, smoked fish or gefilte or vegetarian)
Poached/grilled salmon
Tuna salad
Hamin eggs
Broth from adafina

I make my own brekas (mushroom filling) with filo dough. Absolutely no transfat. It freezes very well (before baking).

I like to serve Deli Wraps for a 1st course sometimes. They are easy to make, you can do them that morning and they are always a hit. I even started buying whole wheat wraps. First I smear russian dressing on the wrap, then I put 2 kinds of deli, a little shredded lettuce and some cole slaw. YUMM!! Cut them in 1/2 on a diagonal and arrange them nice on the plate.

That sounds so yummy! All these ideas are great!

Went to the store and bought Morrocan cigars (filo dough so no trans fats). Will serve them with chumus. But I really like the deli roll idea for another week when I manage to find mehadrin deli.

Taco salad

Brown 1/2 kilo turkey/chicken with taco seasoning (google taco seasoning for recipe--its pretty easy)

cut up veggies (I use lettuce, tomato, avocado--sometimes)
Sometimes I throw in a can of black beans

dressing is 1/2 jar of salsa with some mayo mixed in

crunch taco chips/doritos on top

Or Grilled chicken salad

lettuce, grilled chicken (sometimes I used leftover baked chicken) slivered almond

dressing 5 parts mayo 3 parts dijon mustard 1 part lemon juice

fried fish of some type (like sole, tilapia, etc)
lox roll ups from Kosher Palette 2
toasted sesame salmon salad (marinate salmon overnight in toasted sesame oil and teryiaki sauce, bake for 30 minutes, flake and mix with romaine lettuce, make more sesame oil and teryaki mixture pour over salad)
lox roll ups # 2 (shmear some pareve cream cheese on a piece of lox, roll up)
pareve ceaser salad from Kosher Palette 2, use dressing omit Turkey that it calls for, or use fake turkey so you can serve the salad with fish, or you can serve it as part of the main course
