I have a slightly unusual recipe, because the base is mushrooms (as opposed to beans, peas, etc.). It's delicious, and I like the fact that it is lower in calories than other variations of vegetarian chopped liver. Let me know if you want the recipe.

1 can string beans, 1 can peas, 1 cup walnuts, 4 hard-boiled eggs, salt. saute an onion and add to above. Put all in a food processor, chop, and voila, you have a delicious and affordable alternative to chopped liver.

Here goes...
Mushroom Mock Chopped Liver
2 cloves garlic
3 medium onions, quartered
1 T. olive oil
8 oz. pkg. sliced mushrooms
3 T. walnuts
4 hard boiled eggs (discard 2 yolks)
1/2 tsp. salt
1/4 tsp. black pepper
Drop garlic through the feed tube of a food processor fitted with the steel blade while the motor is running. Process until minced, about 10 seconds. Add the onions and process with several quick on/off pulses, until coarsely chopped.
Spray a large nonstick skillet with pam. Add oil and heat on medium heat. Add the onions and garlic. Saute until golden, about 6-8 minutes. If the mixture begins to stick, add a little water. Add mushrooms and cook for 6-8 minutes, stirring occasionally, until nicely browned. Remove pan from heat and cool slightly.
In the food processor, add the walnuts and process unitl coarsely ground, about 10-12 seconds. Add the onion-mushroom mixture, eggs, salt, & pepper. Process with several quick on/off pulses, just until combined.

Blend in food processor with salt.
Deceptively simple and delicious.

Will it make a difference if I use frozen green beans and peas?
