Me three!! Whenever I have tried to make it I keep on adding more water but we end up eating crunchy rice

I actually made some today and it was delicious.
2 cups boiling water per 1 cup rice.
1 cup brown rice
grated carrots(or u can do diced peppers)
mushrooms
tomatos
well spiced and salted.
oil and water.
bake at 350 covered until the water is absorbed and taste it. (good hour and half-if uncovered then less)

if I leave out the veg. does the amount of water change?

I think that the rule is 2 cups water to 1 cup rice but I never made it plain.

1 cup rice
2-1/2 cups water
seasonings/vegetables of your choice
Bake, tightly covered, at 375
Brown Rice: 1 hour and 30 minutes
White Rice: 1 hour

Thanks ramom.
I've given this recipe out to many people and they thank me for it.
I add baked, breaded eggplants with a scoop of rice on top sometimes or substitute the rice for orzo.

basically.
Maybe a little less cooking time as pasta cooks faster than rice. I only tried it with diced peppers(instead of the carrots) tomatos and mushroom.

Baked Brown Rice
1 cup brown rice
3 cups water
2 TBSP onion soup mix
1 TBSP soy sauce
drop of oil
Spray baking dish. Combine all ingredients. Cover and bake 1 hour at 400 or 1.5 hours at 350.

I make it every week!
1 cup brown rice
2 cups very hot water
cover tightly with foil
put in preheated 350 degree oven
bake one hour
