I just baked pita.
only about 1/2 had a pocket.
anyone know why?

either the oven wasnt hot enough or the dough not thin enough.

I find mine have a better pocket if I don't roll them too thin. I use 100% whole wheat, though, so it might be different with white. I don't know. Yes, the oven needs to be super hot so the steam inside the dough immediately creates the pocket. If you open and close your oven too much, the temperature inside drops significantly. It is a good idea to leave the oven closed to heat up again a couple minutes between batches. Also, I find it helps if I allow the pitas to "rest" (rise a bit) for a few minutes after rolling them before baking.
