Boy Choy salad- salad time 1

2 oriental flavor ramen noodles
3/4 cup sugar
3/4 cup olive oil
1/3 cup vinegar
2 tbsp soy sauce
3 heads bok choy
2 bunches scallions chopped
1 jar sunflower seeds
3 cups sliced almonds

remover seasoningpackets from ramen noodle and set noodles aside. combine seasonings, sugar, oil, vinegar and soy sauce in a jar. cover and shake well. Slice bok choy, scallions, sunflower seeds and almonds in a large bowl and add dressing and noodles right before serving.

If I do not have bok choy and I want o make this salad on a whim - I usually use shredded green cabbage (and purple cabbage and shredded carrots). I also make 1/2 the dressing.

key, I notice you are posting a lot of salads here and I appreciate it a lot. my question about this salad is, aren't the ramen noodles cooked at all? or are they just sorta crushed up into the salad?

Just break them up a bit. It adds a little crunch to the salad in the beginning. The longer they sit, the more liquid they absorb, the softer they get.
