Citrus Tequila Chicken & rice

Marinade:
1/2 cup oj
1/4 cup lime juice (about 3 limes)
1/4 cup tequila
2 T oil
chicken, any kind

Salad:
rice, leftover is fabulous for this
1 cup cut up peppers, any color(s)
2 scallions, cut up
cilantro or other herb to taste

You marinate your chicken for 4 hours or overnight. You grill it or bake it in a pan until light brown.

If you want to make the accompanying salad, you mix the salad ingredients and put them in the chicken pan about 15 minutes before the chicken is done, juggling the hot, nearly cooked chicken with the stuff you are shoving under it. I do this very often and it's tricky, good luck with that !! But you get really great flavor that way.

Otherwise, you can serve the salad at room temperature, with a little of the chicken marinade mixed in (boil it first of course), adding in some salt, and olive oil..
