Need Main Dish ideas (to bake). Im having loads of people and just defrosted a huge family pack of Chicken breasts.

use a little olive oil & spice them up & grill them for about 20 min on each side ... if you want to pound them down - less time ... cover them once broiled to maintain moistness
make some sauce to serve over chicken

Apricot curry chicken
In a large/shallow ovenproof casserole/pyrex, lay 1kg of skinned and de-boned chicken breast (supreme).
Mix 1 cup of apricot jam, 1/2 cup mayo, 1/4 cup dry white wine, 1 tbsp onion soup mix, 1 teasp paprika, and 1 teasp curry powder. Let marinate anywhere from 1-3 hours.
Bake in 180C oven for 45min-1hr till the chicken is cooked. Garnish with toasted almond slices (optional) and chopped dried apricots. Great served with rice, leftover makes lovely chicken salad or sandwich filling.

[b]chicken pastrami roll ups [/b]
marinade chicken cutlets in oil and spices( salt, peper, garlic powder. paprika, )
dip into corn flake crumbs on both sides
coat only ONE side with mayonaisse
place a slice pastrami ontop of mayonnaise
drizzle with a bit of mustard ( opt)
roll up jelly roll style
bake 45 covered 15 uncoverd on 350 degrees

Thanks but I prefer not to use processed meats like pastrami. The more natural the recipe, the better. Any substitutions for the future?
I ended up sauteeing onions, mushrooms, red pepper and green pepper. I rolled it , and put a toothpick and glazed it w a touch of duck sauce, and baked it. It was yum
