The Tomato Basil Rigatoni
a la Family Circle
3 oz sun dried tomatoes or fresh tomatoes
box pasta, any kind
1 1/2 cup milk
spoonful of cream cheese, herb flavored if possible
4 oz provolone (smoked cheese); optional
1 cup shredded cheese
2 tsp cornstarch or potato starch or flour for thickening mixed with 1 T water
1/2 cup basil leaves, cut into stripes - or other herb of choice
pepper to taste
Boil your noodles and set aside. Plump your sundried tomatoes in hot water.
Heat milk and add cream cheese, provolone, and mozzarella until melted. Add your thickener. Cut up and add the fresh tomatoes or add the drained and chopped sun dried tomatoes. Add the pasta and pepper. Serve hot.
