Fennel Salad
from Spark People
DRESSING:INGREDIENTS:
2 T orange juice
1 T red wine
1 T vinegar
pinch Salt
3 T oil
SALAD INGREDIENTS:
1 Large onion, any color
2 fennel bulbs
(4 Medium oranges sectioned, optional - I left this out)
ADDITIONS TO THIS RECIPE: All optional
1 tsp honey
1/4 cup sunflower seeds (I used pumpkin seeds)
1/4 cup dried cranberries
1 cup grape tomatoes or cut up tomatoes
Directions:
Cut up and mix your vegetable ingredients in a bowl. Top with the dressing and additions.
Makes approximately 6 2-cup servings.
