In deference to those who don't want to eat raw eggs, I was wondering if the eggs in meringues are cooked. The recipe I got was to preheat the oven, put the cookies in and then turn it off. So, are they cooked enough to not have any bacteria in them? TIA

I actually don't know but my DH has an oral allergy to eggs - he can only eat them fully cooked so no cookie batter, mousses, or sunny side up eggs and he cannot eat meringues so I don't think they are fully cooked.

yes, the egg whites are fully cooked. otherwise they would not have that dry texture. it doesn't take much heat to cook an egg. I imagine you turn off the oven to prevent burning, but the oven is still hot enough to continue cooking.
