Melon with slices of smoked meat (yes, very european, but also very yummy)
Salmon in puff pastry dough
Smoked salmon with avocado salad (make it look nice by making individual plates with the avocado scooped on like ice cream)

Deviled eggs! Everyone I know absolutely loves 'em, and they are more festive than egg salad, although the ingredients are basically the same. Or Scandinavian Potato Salad, which adds chopped herring, chopped dill pickles, HB egg slices, and pickled beets to the usual potatoes and mayo. It turns a groovy psychedelic pink, and if you're weight-watching, swap steamed cauliflower for the potatoes and use fat-free mayo.

I would love to do somethign with PP since I already defrosted a package and don't need the whole thing. Problem is, I don't want to do fish or chopped meat or deli. I thought maybe tuna pinwheels, but I'm not sure. Do you have any other ideas?

Does anyone know if you can make salad "bowls" out of puff pastry? Maybe I can do something like that for an appetizer?

You can do tuna squares. Basically just put dabs of tuna, and cover over with puff pastry.
