Preparing squash/zuchinni latkes ahead of time?

I'm making potato latkes one night of Chanukah, and then squash and zuchinni latkes the next night. Do you think I can use my food processor to grate the vegetables after the potatoes and they'll stay fine until the next night? I can just keep them in separate ziplock bags and add the rest of the ingredients and fry them the next day.

What do you experienced latke-makers think?

You search online for a recipe and follow it! I haven't figured out which one I'm doing yet, so no real advice yet...

squash kugel

2 lbs squash
4 eggs
1/2 c oil
1 tsp balking powder
1 cup flour
1 onion blended
salt

blend squash & onion, add rest of ing bake 350 for 1hr to 1.15 min
im sure if u want to make it into latkes just fry them hope it will work

I would not prepare earlier it will get to watery

But can't I just drain it? I won't be making the whole batter, just shredding the vegetables. So if the liquid comes out, can't I just drain it to make it dry again,a nd then add the other ingredients then?
