Praline Chocolate Cookies

Note: I have not made these -- I ran out of freezer space, but I would have tried the recipe otherwise.

2 cups ground filberts
3/4 cup ground almonds
½ cup + 3 tbsp. cocoa
3 cups confectioner's sugar
pinch salt
4 lg. egg whites
1 tbsp. vanilla extract

Preheat oven to 350. Line 2 baking sheets with parchment. Spread nuts on sheets and toast for approximately 10 minutes.

Combine cocoa, confectioner's sugar, salt and nuts in mixer. Mix at low speed for 1 minute. With mixer running add egg whites and vanilla.

Mix on medium speed for 3 minutes until slightly thickened. Do not overmix or egg whites with thicken too much.

Spoon by tablespoons onto prepared sheets. Once they are in the oven immediately lower temperature to 320. Bake 14-16 minutes or until thin cracks appear.

Broccoli Kugel

16 oz. broccoli, cooked and mashed
1½ tablespoons potato starch
1½ tablespoons oil
2 tablespoons onion soup mix
⅓ cup almond milk
⅓ cup mayonnaise
2 eggs
pesach crumbs

Combine everything except crumbs. Put in an 8 x 8 square or 9" round pan and sprinkle crumbs on top. Bake uncovered at 350 for 40-45 minutes.

We like the knish very much and make it all year round (with flour instead of potato starch). Recipe came from a very old thread here which I can't find anymore, but I posted it in that thread mentioned above with the menus.

I wouldn't want them to sit out for over a week. I don't know how fresh they'd stay.

I have yet to have a OOTBubby recipe flop and I've been shamelessly asking for recipes for the last little bit. I hope to bake OOTBubby's potato knishes and my recipe for cheese buns this afternoon...

No, just enough to give a nice covering to the top (like the cornflake crumbs you'd sprinkle on during the year).
