I have about 50 more (we had about 200 before) bananas to go. I froze 12 but what else can I do that requires nothing more then a cutting board and knife? I have no special Equipment like a food processor or mixer.

you can freeze them as is in small bags, to be used in future recipes (cakes, smoothies, etc.)

I love frozen bananas as a treat. I wish I had that many lying around just to freeze!

Whichever bananas you don't end up using, peel and then freeze. You said you don't have a food processor for Pesach (neither do I), so just wait until after Pesach is over and then blend the frozen bananas 2-3 for a few minutes. They'll turn creamy and perfect ice-cream consistency. It's really not necessary to add anything else, tho sometimes I add vanilla extract, rum extract, chocolate syrup, nuts and/or sprinkles (even tried a little bit of Rich's Whip once). It really comes out delicious and it's fun to experiment with!
I actually have a few frozen bananas from this Pesach in my freezer, waiting for me to turn them into yummy pareve ice cream after Pesach!
