Fruited Holiday Honeycake

Blend one orange and one lemon. Add 4 eggs. Cream with 1 1/2 cup sugar, 3/4 cup oil, 1 cup honey, and 1 cup cold coffee. Add 1 tsp each of cinnamon & ginger. Add 3 1/2 cups flour, 1/2 tsp salt, 2 tsp baking powder, and optional: 1 cup each of raisins and nuts.

Bake in two 9 by 6 loaf pans (I prefer 9 by 13) at 350 for an hour for the loaf pans, 30 minutes for the 9 by 13 .
