I have a lot of raisin challah left over from Rosh Hashana. I'm in the mood of challah kugel - does anyone have a recipe? If it includes overripe pears and maybe also apples, it would really be economical, but any good recipe is welcome.

I guess you can add in any fruits you want if you'd like...
but I love this recipe
(you can for sure use less sugar by the way)
5 eggs
1 medium challah
3/4 cups sugar
1 package instant vanilla pudding
1/4 cup coffee whitener or soy milk
3/4 cups oil
2 scoops vanilla sugar
cinnamon and sugar
preheat oven to 350
rip challah
wet and drain
add all other ingredients and mix
pour into pan and top with cinnamon and sugar bake till top is crispy

LOVE this recipe:
1 whole egg challah, crust peeled
soak in water until saturated then squeeze out water- leave in bowl.
in a separate bowl:
mix together 6 eggs, half cup oil, three quarters cup sugar, 1 packet vanilla pudding mix, 2 teaspoons vanilla, and 4 cut up, sliced apples. break up and add challa. sprinkle with cinammon.
Bake at 350 until golden.

we make a simple challah kugel all the time.
Leftover challah crumbled and soaked in hot water. Add eggs to taste, if you want sweet add cut fruit and honey, if you want spicy add salt, pepper, garlic, paprika and curcumin, also maybe chili flakes. mix. Bake at 420 degrees for an hour in a greased pan. Enjoy.

I made this recipe with a little less sugar and no vanilla, and cardamom instead of cinnamon. It's really good! I hope there's still some left by the time Shabbos arrives. Thanks for the recipe!
