I will be making a milchig meal for about 20 people on the last days of Pesach. Generally, when I make milchig for company, I prepare lots of dishes for people to help themselves, rather than *main* with *sides* which I would do for a meat meal.
But without pasta, I'm a little stumped as to what to make.
I'll start with a vegetable soup, and I'll make some type of salmon, but I needs lots of other ideas. If I'm ambitious, I might try a cheesecake for desert, otherwise I'll just serve macaroons, and whatever other parve cake I have.
PLEASE HELP!!!!!
For the record, we DO eat gebrokts, but we DO NOT eat kitniyot.
Let's also please not use this thread to discuss the halachic necessity or otherwise of having meat at a Yom Tov meal.

A big salad bar - or a bunch of different salads
Kugels
What about Matzo Lasgna
Vegiterian Stuffed cabbage
This dish is alway a big hit-
Cut and peel Zuchinni, sprinkle bag of Motzralla cheese pour a jar of Marinara sauce. Cover bake for 2-3 hours.

Great ideas! I'm making a dairy meal and I'm having lasagna, but couldn't think of sides other than roasted veggies and salad.

Could someone please post recipes for matza lasagna.
For quiche, how do you make the crust?
I should add that due to allergies of one of the guests, I also need to be nut free.

Cheese pie. You can make crustless quiche. Fancier salads. (We often do milchig and are always nutless; it's not difficult.)

What is this cheese pie of which you speak? How do you make it? How is it different from Quiche?

apple matza kugel
potato kugel (served with sour cream/farmer cheese & chives)
Syrian kousa bi jiben (zucchini, cheese & egg pie)
Syrian spanech bi jiben (spinach, cheese pie)

It's crustless. (Well, I make mine crustless.) It's pretty much a cheesecake filling, but less sweet and with matzah meal to hold it together. (During the year I use breadcrumbs.)
500g gvina levana (you can use 2c yoghurt cheese or very, very, very soft cream cheese)
200g sour cream (1c)
1 egg
1/4 c. sugar
1/2 c. matzah meal
dash of vanilla (NOT vanilla sugar)
cinnamon to taste (optional)
Mix, bake at 350 for about 20 minutes.

Apple Kugel (from Classic Kosher Cooking by Sara Finkel...one of my favorite cookbooks)
8 matzos, broken into pieces
5 eggs, well beaten
2/3 cup sugar or jam
1/3 cup vegetable oil
1 teasp. salt
1 teasp. cinnamon
1/8 teasp. nutmeg
1/3 cup walnuts, coarsely chopped
5-6 large tart apples, peeled & thickly sliced
juice & grated rind of 1 lemon
1 cup raisins, optional
Topping
1/3 cup sugar
1/4-1/3 cup chopped walnuts
1 teasp. cinnamon
Soak matzos in warm water for 2 minutes. Drain immediately and squeeze out water.
Combine with remaining ingredients, mixing well, and pour into a well greased, 9x13
pan. Combine topping ingredients, and sprinkle evenly over surface. Bake in a preheated
350 degree oven for 1 hour.

Caesar salad (minus the croutons)
Steamed (or baked) broccoli --can sprinkle with cheese.
My kids ask for it frequently!
Dairy scalloped potatoes
layer very thinly sliced potatoes, cheddar cheese, repeat-we do 3 layers potato, 2 cheese. Mix one beaten egg with one cup water/milk and up to 1 teaspoon salt. Pour over pots and cheese. Sprinkle a bit of shreeded cheese on top. Bake 350 one hour covered, then 30-60 m uncovered.
