Depends on what you prefer. first cut is leaner, second cut, fattier. My DH, who has very different tastes in meat than I do, likes first cut... He also likes dry meat that you have to use your teeth for. My BIL, who is a great cook, prefers second b/c it is fattier and tastier. He makes the most delicious meat that melts in your mouth.

I like 2nd cut, obviously, and it is cheaper, too... But again, I think it's a matter of taste.
