Does anyone know the best way to prepare:
Pickled Turkey Roast (White Meat)
Pickled Mock Tender Pastrami
Also, does anyone have a good corned beef glaze that does not contain mustard? (I can't bring myself to use the pesachdike imitation mustard...)

I only use root vegetables and no spices so basically every meat I prepare I cook in onions, celery root, a bit of ginger, a bit of horseradish, salt, shmaltz, a bit of parsley, kohlarbi, etc.

Make the typical corned beef glaze and just skip the mustard -- still tastes great. Use this:
1 c. light brown sugar
1/3 c. ketchup
3 T. apple cider vinegar

the turkey roast might be good with a pineapple glaze, I would fry an onion and some garlic add a can of pineapple and maybe a little brown sugar and cook until it gets syrupy then pour it over the cooked sliced turky roast and heat in the oven or on the stove for 1/2 an hour.
