Tortilla fruit cups
4 tbls sugar
2 tsp cinnamon
6 (6 inch) soft flour tortilla
pam
1 cup grapes
1 ripe banana
8 strawberries
1/2 cup blueberries
1/2 cup strawberry yogurt or non-dairy whipped cream
1) preheat oven t o 350. 2) mix sugar and cinnamon in a small bowl
3) lay tortilla on big sheets of foil. spray with even coating of pam. sprinkle with half the cinnamon and sugar . turn tortillas over and repeat on teh other side.
4) transfer each tortilla to sheet of paper towel and place in microwave onhigh 10-12 seconds.
5) spray muffin tin with pam. place tortillas in muffin tin folding sides to fit. piut few tbls of water in empty muffin tin so it wont burn.
6) bake 8-10 mins till golden brown
7) remove tray from oven and let cool for 5 mins. remove cups and let cool all the way. you can keep them in a ziploc for 2-3 days.
8) wash & dry fruit
9) cut fruit, put in a medium bowl. add blueberries, add yogurt or whipped cream and mix gently so the fruit will not get mashed.
10) scoop some fruit into each tortilla cup.
