I was thinking of making something with phyllo dough meat and mushrooms and roll it up and bake, anyone done this before? how exactly would I go about this?

You can either make cigarim/boureg or make into triangle.
Either way, you'll need to cook the filing first as phyllo bakes very quickly.

The usual filling seasoning is sautee finely chopped onions, add ground meat and cook till it turns brown and loses red colour, break up pieces, add a few tbsp tomato paste, salt & pepper, cumin and/or cinnamon and/or all spice and chopped mint/parsley. Make sure it's rather dry and not drippy. You can add pine nuts, currants, or pomegranate seeds.

Defrost phyllo (unless you're getting fresh) overnight in the fridge. For cigarim shapes, I cut the whole roll in three. Keep the two in the plastic bag and use only one stack. Unroll to a pile. Prepare a bowl with oil and a pastry brush. Brush oil on all surface of phyllo dough. On the bottom/toward you, spread about 1 heapful teasp filling, tuck in side and roll into cigars. Do egg wash and bake in high (180C) oven--keep an eye to make sure it doen't burn. If not doing the whole batch, you can freeze filled and shaped roll before doing the egg wash.

Triangles are similar, except you should cut the phyllo into four (ie narrower strip). Brush oil as above. This time, you put the filling on bottom right side in a triangle, and fold into triangles.

I do kefta beef kebabs. Don't have an exact recipe but this one looks good.

You can use ground beef and just a dash each of the cinnamon, allspice and cayenne. Bake uncovered on 425 for 20 minutes.

on FB I saw a recipe for beef bundles, which is puff pastry dough and meat cooked with a sauce on top. if it's good, I'll share it.
