Can you shred it into salad and top with dressing so that it has some flavor?

How about mixing the chicken (shredded) into a homemade (therefore less expensive) matbucha and leaving in the eggplant? Put it on polenta or rice or spaghetti squash?

does the chicken still have bones or is it boneless? I would pick out the whole pieces and rinse them off and put them in the soup pot. If boneless, rinse the pieces and make chicken salad like someone else said.

I wouldn't use it for soup though because it doesn't give the same flavor because it's already cooked. Google recipes with cooked chicken. There are quite a few.
