I've made pancake batter and kept it in the fridge for a few days and it certainly hasn't turned brown!

Me too. I made a double batch of batter on Sunday thinking I'd make extra waffles and freeze them but never got around to making them. When we ran out of milk on Tuesday morning, I was happy to have the extra batter for a quick breakfast!

Hmm. This hasn't been my experience but who knows. I make from scratch. Maybe if you make from amix it's different? Could be a good suggestion for OP if that's the case.
