Not too similar to a green leafy salad or Asian coleslaw, and a little more interesting than Israeli salad or cukes. Any ideas? I'm looking for something that won't break the bank either, especially consider the quantity. TIA!

pasta salad (regular or asian sesame), corn salad, broccoli craisin (might break the bank  ), caesar, cold cut salad

Tomato salad is wonderful: tomatoes cut up without the seeds, onions, sliced black olives. Dressing is olive oil, white vinegar, pepper, salt and oregano if you like that. Yum! Naturally sweet and refreshing.

Jamie Geller has a corn salad recipe that I make frequently
If I remember correctly=
2 cans of corn- She calls for one yellow and one white but I usually just do 2 yellow
10 grape tomatoes halved
1/2 purple onion thinly sliced
1 can hearts of palm sliced into rings- you can use less if your making a triple or quadruple recipe
2 avocados cubed or 1 cup shelled edemame
dressing- 2 tablespoons each of olive oil, rice wine vinegar, sesame oil and ume plum vinegar- if you can't find it you can just double the rice wine vinegar.
this is enough for 8-10 portions.
It's always a hit and the taste is very unique.

I second the nish nosh salad, I make it every yr for a big pot luck purim seuda and it is always a hit....

Taco Salad is also super easy.
Dressing:
Mato
Ketchup
Salsa
Chili powder (optional)
Lettuce
Chips
Tomatoes

I make a different type of chick pea salad
Different color peppers sliced in thin strips
Thinly sliced radishes (easily done in the food processor)
Chick peas
Garlic
Olive oil
Salt

bean salad made from various canned beans red onion and bottled italian dressing is cheap easy and colorful, angel hair with cabbage, hearts of palm tomato avacado, macaroni, potato salad, quinoa salad, rice salad
