Anyone know any amazing books or parenting classes on how to get through the toddler stage? Looking to read up on dealing with a defiant toddler, tantrums etc..

just fyi everyone will find different people and books talk to them differently. additionally when you read a book you may not agree with everything but there can be parts that speak to you and would work for your situation.
books that I found useful:
happiest toddler on the block by harvey karp
baby whisperer for toddlers author: tracy hogg
I took out other parenting books from the library and while they may have had a pointer or two I picked up on those are the two I remember best.
oh just remembered love and logic for preschoolers or toddlers was another.

I highly recommend "1-2-3 Magic" by Thomas W. Phelan.
Our friends use this for their 6 boys, and they have the most well behaved kids I've ever met.
I also highly, highly recommend Miriam Adahan's books (they may be out of print already, but you can fins used versions on Amazon.com):
1) The Miriam Adahan Handbook: Living With Kids, Parents at Their Best. (I love this book, it gave me so many practical tips)
2) Raising Children to Care: A Jewish Guide to Childrearing

I found two things really helpful:
Blessings of a Skinned Knee
and
Parenting Classes by talmidim of Rebbetzin Spetnor (there is a teacher in every major frum community and some you can do over the phone)

I think it's crucial, and often overlooked, to first develop an understanding of children and parenting in the larger sense, to develop a context for parenting. Individual techniques for specific ages and challenges can come after that, but there has to be something holding it all together.
I recommend Gordon Neufeld and Alfie Kohn for context.
