I have a lot of eggplant I bought in a sale. It is fairly good now, but I need to use it before it goes bad. Without too much time and effort, what can I make with it that is freezable?
Also, how long do I have before it starts deteriorating?

bread and bake eggplant slices. freeze. use at a later date for eggplant parm.
fry slices. freeze. use for moussaka.

you can make babaganoush. cover eggplant in foil put on fire (on grate) and let it 'cook' roll it over a few times with the help of 2 spoons and shut off fire when its mushy on all sides. open the foil witht he 2 spoons, cut the eggplant in half and scoop out the insides into a bowl. with a hand blended blend it and freeze in bags.
to make the babaganoush defrost add 1-2 crushed garlic cloves per eggplant (depending on size) salt and mayo (2-3 tbsp per eggplant)
yum! freezes great!
