Back to the science-y side of things...
DS loves the Walking with Dinosaurs videos with Nigel Marven. Thanks to some pretty spiffy CGI and practical effects, it's like watching "The Crocodile Hunter" if he had a time machine and was studying prehistoric creatures. Like other wildlife documentaries, a bit of blood and suspense when predatory creatures are around, but nothing truly scary.

I'm assuming if you've seen all the recent Disney movies, you've seen Dreamworks stuff too. How about How to Train Your Dragon? The animation and the music are breathtaking. I wish I'd seen this in a theater, I'm sure it literally would have taken my breath away. (I haven't seen the sequel yet, so no spoilers!)
Other good Dreamworks movies (I don't like all of them... they tend to be more risque and chutzpadik than Disney films) are Kung Fu Panda 1 and 2.

The Princess Bride!!!! Geeked out choice but so much fun. The Flight of the Navigator - it's an old 80s sci-fi flick about a boy who is kindnapped by aliens and returned to the wrong time zone and has to persuade the aliens to send him back to the right time.

I also second the Zir Chemed, Rachel's Place and other Jewish videos. If she's a visual learner, as you say, you don't want her absorbing TOO many of her life lessons from the creative minds of Hollywood. That's why I love the American Girl videos - because the messages are quite positive and clean. But if you start watching too many movies, you start unconsciously mirroring those attitudes.
Aviva Productions in Israel also has many books-on-tape - she might enjoy those, if reading is not her "thing."

I also recommend them. DH and I watch them all the time, and we don't have children yet! Maybe we're a bit like kids...
