Recipes for zucchini that doent need 2 be eaten right away

We like zucchini but almost all the recipes I see that use zucchini must be eaten right away. What recipes that use zucchini will still taste great as leftovers?
All I can think of is soup (in the winter) and zucchini kugel. What else?

Lemon zucchini with rice:


* Julienne the zucchini

* Sautee zucchini in EVOO with salt & coarse black pepper

* Place zucchini in a bowl

* Add a splash of lemon juice

* Combine with cooked rice

I usually use a combination of green and yellow zucchini for this dish.

sautee onion and garlice. add zucchini slices and chopped tomatoes, season with salt, pepper, and basil. Saute until soft. It can stay in your fridge for several days. You can serve with melted cheese which is super yum. Sometimes I add soy sauce/braggs

Zucchini holds well when roasted. I cut it into slices and spray with olive oil spray then shake with za'atar. Put it in the oven at 350 F to your desired doneness. Is great for a few days after and reheats nicely in the oven or microwave.

Expanding on Eitam: slice zucchini, onions, pepper, mushrooms. Toss with a little oil (sesame oil adds a nice punch). Spread on cookie sheet(s). Bake at about 375 for 1.5 hours, switching trays if you have two.
This is if you like it a bit dried out; check after an hour. It keeps in the fridge for a few days and is great at any temp.

This really works for you when reheated?
I have made this several times. It is always delicious at first but gets soggy when reheated. What am I doing wrong?
