I suppose a kugel type thing in a muffin pan would be okay but really looking for something like knishes or blintzes (aside from just having different filling).
Ideas anyone?

An easy knish recipe that freezes well is to make mashed potatoes from the box (using a little water or soy milk ) so that it remains pareve and then adding sauted onions and or mushrooms. Wrap up mixture jelly roll style in pastry dough (optional: brush top with egg and/or sesame seeds) and bake until golden brown. Then slice. You can also serve with mushroom sauce. Freezes beautifully.
P.S. If you put potato/onion mixture on pastry dough and then sprinkle the mushrooms on top before rolling it looks nicer (almost like two layers).

Potato knishes freeze well. Potato blintzes should freeze OK too but can't stay in the freezer too long as the blintz leaves get freezer burnt quicker.

Thanks for the replies. I do intend to freeze the knishes and blintzes but I was looking for more ideas.
Does anyone have some sort of pie recipe maybe?

I do quiches all the time. Milchig and fleishig. They all freeze well and when defrosted they taste fresh. You can use a pie shell or I use this amazing recipe for easy whole wheat quiches.

(Obv substitute milk for soy and butter for earth balance or margarine for fleishig fillings)
My filling combos include:
-red onion, cheddar, spinach, mushroom
-cheddar and broccoli
-spinach, salami, and red onion (and coat the crust w mustard first)
-mushroom and onion
-roasted red pepper, basil, and mozzarella

I forgot to tell you about brisket rolls/pies
Take YomTov roasts with sauce and shred It. Add mushrooms and onions and put into a pie crust with a top or roll into a puff pastry and freeze. Yum!

Orzo is a great dish to freeze.
As is cabbage and noodles.
Sweet potato pie.
