So, my dh just got the results from his blood test, and the dr said he should avoid carbohydrates. Any menu ideas for Yom Tov? I am really clueless here 
Also some Parve ideas? He should not be eating too much meat, which normally isn't a problem, but for Yom Tov? And did I say that my dh does not eat any fish?
Help me please!!!

Some elevated poultry ideas:
Slow roasted Cornish hens
Pickled chicken 'pastrami' roast
Turkey timbales
For sides:
Zucchini 'spaghetti' salad
Cauliflower 'rice'
Butternut squash fries
Garlic roasted vegetables
Sesame green beans
Roasted pattypan squash
Can he have quinoa?

Chicken soup.
Eggs
Check out the number of carbs in various veggies and make a salad with low-carb ones. To make the salad more of a meal add chicken strips.

We serve chicken and veggies, a thousand different ways, or the same way, a thousand times, depending on our mood. 
This year my favorite side is fruity coleslaw: take a bag of shredded cabbage and carrots, add cinnamon and salt, a tablespoon of honey and water, and a handful of dried cranberries and chopped roasted almonds.
Roasted veggies is another favorite, especially a mix of yam, butternut, pumpkin and carrots with rosemary.
Stir fry peppers, carrots, shredded cabbage, ginger, garlic, and salt, or if you want, add a little hot paprika and sugar free plum or apricot jelly.
