My husbands birthday is next week & he loves chocolate cake I found a recipe for a German chocolate cake that looks delicious (browneyedbaker.com) but the cake calls for buttermilk I would like to make it pareve. What can I use instead of the buttermilk?

I use almond milk with a tablespoon of lemon juice.

A substitute for 1 cup buttermilk is 1 tablespoon vinegar in a cup, fill with milk. For parve I do the same using soy milk or almond milk. I like the vanilla flavored ones, but any is fine.

I use whatever I have. Almost always unsweetened.

Just keep in mind that buttermilk is acidic. The acid may be necessary to interact with the baking powder. So if you omit, replace the acid. Like some posters have said to add vinegar, for example.
If you add just soy milk the texture of the cake will likely suffer.
