First of all it depends on how big you want the challahs to be. You can take any recipe and divide it to make it smaller.

There is a recipe for a bread machine challah in Kosher By Design 1 that makes about 2 large challahs.
I"m sure it can be done by hand.

I make this recipe in my bread machine. It is delicious. I do half whole wheat, half white flour.
