I don't follow a recipe
I just take frozen spinach and put in a frying pan to saute until it gets soft, I add some spices, then I put a spoonful of that and a piece of salmon in a pastry square, close up and bake
I serve it with dill sauce

do you have the new book starters and sides made easy? theres a recipe for spinach egg rolls and I used that filling for salmon wellington and the dip recipe I spread on the salmon. then I made a dill sauce. it was so good! let me know if you want the recipe.

spinach mixture
2 tbls oil
1 onion diced
1 (16 oz)bag frozen spinach
1 tsp garlic powder
1 tsp onion powder
3/4 tsp salt
2 tbls mayonnaise
2 tsp mustard
1/8 tsp black pepper
(the original recipe also calls for corned beef)
Heat oil over med high heat. add onion and sauté till soft, about 7 mins. add spinach and sauté till fully cooked, about 15 mins. add garlic, onion, salt, mayo, mustard, and pepper.
dipping sauce (I spread it on the salmon before I put in the spinach)
2 tsp yellow mustard
1/4 c mayo
1 tbls brown sugar
*I also added a bit of onion soup mix
serve with dill sauce
6 frozen dill cubes
1 garlic cube
1/2 c mayo
1 capful vinegar
2 tbls sugar (or more to taste)
enjoy!

How many mini ones (cupcake holder size) will this make?
