I have a bunch of mint. I only need a little bit for my recipe. Any ideas of what to do w/ the rest? I've tried freezing it in the past and it didn't freeze well.

If you freeze it in ice cube trays (with water too of course) it's lovely to use in iced tea. (Or hot tea if you don't want piping hot). I don't use much mint in cooking but I do like it in a cucumber salad. I've also had it with chunked/ balled watermelon and it was great.

You're better off air-drying mint than freezing.
Once it's dried, you can crumble leaves by rubbing them in your hands to release flavour.
It goes very nicely with meatballs, roast chicken and lamb dishes.
You can also use it for rice, melons, fried zucchini.
But I agree lemon nana is lovely and so refreshing.
