I have lots of beef in the freezer - the type that is used to make a roast. I want to make something fancy for sheva brachos main dish out of it - but plain sliced roast doesn't look fancy. Is there some way I can serve it or a way to make it into something fancier?

I think roast is very nice to serve for sheva brachos,
just the fact that it's beef is more upscale,
if you want it to look pretty, you have to slice it wehn it's cold so you get nice slices,
then you can cut a slice in half and lay it overlapping over a cirle of mashed potatoes, with some veggies or string beans on the side
or you can cut a thicker slice and then slice that into thin slices in the opposite direction and fan it out over something else like mashed potatoes or something that will hold to shape into a cirle shape
