I did a quick search on Pinterest....there's avocado or squash based sauces as well as a mock Alfredo made from cauliflower. Haven't made any of them...what ate you looking to make op?

Not sure what kind but I'd prefer a tried and true recipe

I am intrigued by this dairy free, tomatoless, not pesto challenge. I will post back if I try any of these recipes and will watch this thread for tried and true ideas.

My go-to pasta sauce is made of milk and cornstarch to thicken. I mix cold milk and cornstarch and then heat it and stir for a bit. It's delicious and comes out super creamy. I then add spices like onion powder, garlic powder, salt (we don't like pepper here) and whatever I'm in the mood of, like spinach, cheese, mushrooms, broccoli, etc.
The milk could probably easily be replaced with almond milk or another milk substitute.

I've tried an avocado dill sauce and it was delicious but you really have to like avocado and dill, not everyone does.

There are some which use Tofu as well as soy milk to replicate the creamy texture of real Alfredo sauce.
You can also add 1/2 cup of Parmesan cheese but that would be dairy unless there is vegan kosher Parmesan cheese.
Vegan Alfredo Sauce

Recipe By:
Serving Size: 4
Ingredients:
1 package Silken Tofu (the kind in the shelf-stable tetra packs)
2 cups Silk Organic Original Unsweetened soy or almond milk
1/2 cup vegan margarine
1-2 tablespoon lemon juice or white wine
2 tablespoons onion powder
1 crushed garlic clove
1-2 teaspoon salt
1-2 teaspoon black pepper (to taste)
Pinch of nutmeg
3 tablespoons cornstarch dissolved in cold water
Favorite herbs
Directions:
Blend tofu and Silk in food processor or blender until creamy.
Melt margarine in saucepan and add all other ingredients except cornstarch. Heat over medium-low until hot, stirring often.
Whisk in cornstarch mixture and heat until just bubbling, allowing sauce to thicken.
Heat until thick, but don’t let it come back to a boil. Once mixture reaches desired consistency, add chopped fresh parsley, basil, chives or other herbs as you like.
Pour over pasta, rice or potatoes and enjoy! Also super good with some sautéed veggies, mushrooms, chopped Kalamata olives or your favorite vegetarian protein.
