I don't.
I would suggest creating a steam environment to get a crunchy crust.
throw some ice cubes into the oven right before putting the challahs in. also misting the challahs while they are baking

I don't know what your bakery's challah is like but try Rebbetzin Kanievsky's challah. From the bio, not the BY cookbook. Proportions are subtly different.
