butternut squash soup garnished with pine nuts
meat or chicken, hasselback potatoes, tied green beans
mini ice cream cakes

I dont know how fancy/your serving style or budget but here are some ideas... these are fleishig. If u want milchig please post

Appetizer choices
Sushi salad
Fruit compote
Lettuce/fruit salad plated
Mini meatballs and rice
Salad in large corn tortilla bowl

Side choices
Wild rice pilaf (can be made in a rice mold)
Green bean almondine
Roasted baby red potatoes
Roasted veggies of any kind


Main
Stuffed peppers
Grilled chicken
Shish kebab
Corn beef in sweet sauce
Capons stuffed with rice
Baked chicken or any roast without crumbs or soy sauce (unless gluten free)

Desserts
Baked apples and parve ice cream
Sorbet
Flourless chocolate cake and ice cream
Fresh fruit
Flavored teas

Please remember not to use soy sauce or prepared sauces without checking for gluten.

Rice and dried fruit-stuffed chicken, sautéed veggies, roasted sweet and regular potatoes, sorbet with macerated berries.

the sheva brachos is for about 20 people. it should be nice but with a small budget.

Replace noodles with rice noodles, bread crumbs with corn flake crumbs, einkorn flour works fine for most gluten intolerant people

Veggie dishes and a meat/chicken dish that's not breaded or battered.
It's really not so hard. If it's only one or two people who are restricted, then make sure to have small rolls so you could bentch.
Read the ingredients well, malt and malt extract contain gluten.

Many corn flake crumbs contain malt. Only use one that states its gluten free. OP, if someone is celiac or gluten intollerant it is best to avoid processed products of any kind and to stick to spices/fresh garlic etc. Or items labeled gluten free. Modified food starch or starch would be another ingredient of to avoid in products.
I would NOT use einkorn!! It does contain gluten even though it claims to be an ancient form. The last thing you want is to make someone sick by saying "here try this most people who are gluten intolerant can eat this." Please stay away from all gluten.
