I remember learning that in "mai Chanuka" it says that Chazal established it the next year, but I thought I remember hearing that it was something that occurred with the menorah in the beis hamikdash that was a siman that Chanuka was a holiday that should remain. Is anyone else familiar with this idea? Where does it come from? Thanks.

I recall that with Purim Chazal did not make it a Yom Tov until a year later. With Chanukah I don't remember that.

The gemara is deliberately vague about it. Chazal established it "in a particular year"

Not sure if this is what you're referring to... The Ramban comments on the Rashi in the beginning ofparshas behaaloscha that HaShem comforted aharon with the mitzvah of lighting the menorah which will be eternal - hint to the Chanukah of the Chadhmonaim
