Pretty cool. I'm going low Carb this year by skipping the potatoes and making zucchini and carrot latkes. I'll probably end up making potato latkes for the kids, though.

I actually made these. Came out like potato kugellettes (not bad, just not really like latkes...)
ETA. Jmm there's your ellipsis! Now I'm going to start noticing every time I do it

cauliflower. don't skimp on the onions. I think I would sautee them first in minimal oil.
if you can afford the carbs, put cornflake crumbs above & below.

Do you do this with cooked cauliflower? Recipe please.
Just want to report on the baked potato latkes; I made some baked and some fried and my kids actually preferred the baked! DH loved it too! (I'm off potatoes so couldn't taste any myself hence third party reports)

We made crispy baked latkes in muffin top tins. Grated potato, onion, egg white, salt and pepper. We got 3-4 latkes out of every potato and was able to count that amount as 1 potato.

I made an awesome zucchini-carrot-onion latke this year. I liked them better than potato latkes!
