I'm making egg and onion (eier mit tzvibel) for a shabbos Sheva brochos...what quantities should I use for a first course portion for 50-60 people?

Are you plating the egg salad individually or are you serving buffet style in bowls?
If individually, how will you be serving? One ice cream scoop of egg and one of liver? Two scoops of egg? In little bowls?
