What's the difference between the two?

Are they interchangeable in recipes?

What is each best used for?

I use potato starch I'm place of flour and tapioca in place of corn starch. It's the difference between a base and a thickener.

They can be used interchangeably in Pesach recipes. Tapioca starch is great for people who can't have white potatoes. I use tapioca in all cake and sauce recipes that call for potato starch and actually prefer the subtle taste difference.

I just noticed that the confectioners sugar that I bought for pesach has the 2 ingredients of sugar and tapioca starch. Does anyone know if that is what confectioners sugar is always made of? I never noticed this before and I have no other boxes to compare to now.

Gefen has been making it like that for years and it's the only one I buy Smile Tastes much better. The other ones are made with potato starch.
