Any ideas? I was going to do mushroom sauce but apparently we don't eat mushrooms on Pesach.

People that dont do mushrooms on Purim do an onion celery sauce...this is what I would do, though I've never made it before.
In a food processer I'd blend a bit of celery root (or if you use celery stalks go ahead and use that)
dice lots of onion, sautee the celery and onion together
I would add some potatoe starch and seasoning such as onion powder, pepper , salt , some paprika for color etc. and water....let it simmer in a sauce pan until it thickens a bit...

Sauté onions and and add some finely diced carrots as well and proceed as you would for a mushroom sauce.

I like marinara sauce or pesto. Sounds weird but goes nicely IMO.

Onion sauce. Thicken with potato starch if you use it.

I once tried some sort of a sauce with potato starch - maybe it was mushrooms, but the mixture turned jell like. How do you add the potato starch - slowly??
