There is a great egg free potato kugel recipe on here. If you search it's the one that uses zucchini as a binder. I've been using it for years with great success.
We are egg free and often bake using egg substitute (powder made of tapioca) which works in most cake recipes.
If you have something specific in mind I may have more detailed recipes.

A cookbook I recommend that has all egg free recipes and pareve is The Joy of Vegan Baking. It's not a Jewish cookbook.

Any wacky cake is egg free. Also applesauce can be used to replace eggs in some recipes. I never tried it, but on an allergy board I'm part of, people always talk about Duncan Hines mix using a can of soda instead of the eggs, oil, and water.
